If you are a long-time patron of upscale bars, you must have noticed a recent shift in the ambiance. When you walk into a top cocktail bar in either Mumbai, Bengaluru, or Delhi today, it feels less like a noisy pub night and more like an interactive culinary studio. Especially if there are more younger folks present at the bar. They are more interactive about their choice of drinks and are willing to learn more about what goes into the beverage they are drinking. This is indicative of a larger shift in the mindsets of today’s generation. This article explores why Gen Z and millennial consumers are becoming more conversational with mixologists and bartenders alike, what they are asking, and how it is changing a number of trends in Indian hospitality.
India’s 23 million annual new legal-age drinkers are now increasingly moving toward intentional, curious, and premiumized consumption. Gone are the days when ordering a drink meant automatically choosing a generic "whiskey-soda" or a sugar-laden commercial pint. In this day and age, it’s more about how to elevate the quality of the drinks you’re sipping on.

Younger generations are actively prioritizing social experience, taste exploration, and flavor complexity over sheer intoxication. The drink-to-get-drunk trend has, perhaps for the better, taken a backseat. Mixologists, too, have evolved beyond just being drink servers. They are now aptly regarded as culinary artists who use sophisticated practices like centrifuges, sous-vide infusions, and clarification techniques.
All of these factors have made drinkers more curious about what they’re drinking. They also want to know why a cocktail is named a certain way and how local Indian botanicals like kokum, vetiver (khus), or mahua are added to modern spirits. This all-round increase in inquisitiveness about drinks is certainly a positive and hopeful change, as it shows active participation on the part of the drinker rather than just mindless, unappreciative consumption.
The rise in Indian homegrown craft spirits can also be attributed to the increasing curiosity in the younger generation. The craft spirit boom, which started with craft gins like Greater Than and Stranger & Sons, soon expanded into craft rums, agave spirits, and single malt spirits. This impressive array of homegrown spirits has sparked significant pride in domestic production, which has led to people wanting to know more about it.
What is more, drinkers are also increasingly curious about the impact of terroir on the spirit. They want to understand how Goa’s humidity or Himachal Pradesh’s mountainous climate influences the aging process and flavor profile of the spirits.

Health is another important aspect influencing questions at a bar. Drinkers of the younger generation often actively track sugar content, artificial syrups, and alcohol content. Many even prefer using healthier alternatives like agave syrup instead of sugar. As such, there is also a surge in the demand for aperitifs, vermouths, spritzes, and high-end non-alcoholic (zero-proof) spirits.
This is another factor influencing the rise of questions asked at a bar. Younger consumers are more likely to align their purchasing choices with environmental values. They also pay keen attention to how bars manage waste. This is an important aspect to consider when making environmentally friendly choices.
What is more, many modern Indian bars have started utilizing citrus peels for oils, dehydrating spent fruit pulp for garnishes, and eliminating single-use plastics.
In order to keep up with the inquisitive consumers, menus have now started to include flavor profiles (bitter, umami, floral, citrusy), ABV indicators, and regional ingredient maps. This information helps people appreciate their drinks and the journey that their ingredients have taken.
Bar counters are now also being redesigned to eliminate high barriers. This allows the mixologist's prep station to be visible and approachable for guests. What is more, hospitality groups are investing heavily in brand education, ensuring staff can explain distillation, ice clarity, and flavor science confidently.
All of these moves hone an environment that is conducive to questions and education, encouraging interest in the alcoholic beverage industry.

The increasing number of questions at a bar is not a matter of concern. Far from it, it represents the maturity and awareness on the part of consumers. This awareness also drives brands to evolve and improve their products for the increasingly sophisticated consumer.
